Carrot Ginger and Turmeric Soup


This recipe is anti-inflammatory, a great source of healthy fats and is SOUPER high in vitamins minerals and antioxidants. It's loaded with vegetables and other good-for-you foods that will leave your body satisfied and feeling good.

Ginger has been shown to improve digestion, reduce nausea, fight cancer, heal ulcers, reduce pain and lower cholesterol. It's also anti-inflammatory and a potent antioxidant. 

Turmeric shares anti-inflammatory and antioxidant properties. It is also improves digestion, lowers cholesterol and can reduce pain. 

Carrot Ginger and Turmeric Soup


Ingredients:

  • 1 T grassfed butter OR ghee
  • 1/2 yellow onion, chopped 
  • 1 lb carrots, chopped 
  • 1 large zucchini, chopped 
  • 2 tsp minced garlic
  • 2 cup vegetable stock
  • 1 cup water
  • 1/4 cup coconut milk
  • 2 tsp turmeric powder 
  • 3 T chopped fresh ginger root

Directions:

  1. In a large pot, melt the butter or ghee over low-medium heat.
  2. Sauté garlic and onions until soft and clear.
  3. Add in carrots and sauté for another 3-4 minutes.
  4. Next, add in zucchini and continue to sauté for another 3-4 minutes.
  5. Add the water, broth ginger and turmeric.
  6. Let simmer for 15-20 minutes until all vegetables are soft.
  7. With 5 minutes left, add in coconut milk and stir.
  8. Remove from heat and puree in pot with immersion blender. You can also puree in a blender or Vitamix.
